
Ingredients
2 tbsp. Olive Oil
1 Pork Loin, around 2 lbs.
1 Onion, quartered
1 Carrot, cut in big chops
¼ cup Mustard
¼ cup Ketchup
¼ cup Soy Sauce
¼ cup Honey
2 tbsp. Worcestershire Sauce
1 tsp. Pepper
½ tsp. Liquid Smoke
2 cups Chicken Broth
Salt
For the baos:
12 Baos
1 Red Onion, sliced
2 Lemons, juiced
¼ cup Mayonnaise
1 tbsp. Sriracha Sauce
Mint and Cilantro
Directions:
1. Heat a deep pot to medium and add the olive oil. Sear the pork loin until golden and crispy on both sides.
2. Add the onion, carrot, mustard, ketchup, soy sauce, honey, Worcestershire sauce, pepper, liquid smoke, chicken broth and salt. Bring to a boil and then lower the temperature, cover with the lid and cook for 3 hours at the minimum temperature possible (if it’s too dry you can add more broth).
3. Once soft, shred using two forks, remove the onion and carrot and combine with the pan liquids.
To assemble the baos:
1. Combine the onion and lemon juice and let it sit for a few minutes.
2. Combine mayonnaise and sriracha.
3. Prepare a Happy Home Story steamer with the paper liners. Bring a pot of water to boil and place the steamer on top. Heat the baos for around 10 minutes or until soft and fluffy.
4. Assemble the baos with pulled pork, onions, spicy mayo and top with mint and cilantro leaves.
